What’s not to love about Pumpkin Soup? Smooth, hearty and classic, it’s everyone’s favourite winter warmer. The Chef’s in the kitchen at EAT LOVE PIZZA in Darling Harbour are a generous bunch. They’ve handed over another of their best recipes for you to indulge in this winter! This is the perfect dish to serve as a winter entree at your next dinner party or with crusty buttered sourdough for a hearty warming snack.
Ingredients (Serves four people)
100ml EVOO (extra virgin olive oil)
½ bunch rosemary
Salt & pepper to taste
Garnish- chopped chives & truffle oil
Roast Pumpkin with rosemary, salt and pepper in a preheated oven at 180 degrees for about 12 minutes.
Peel potatoes and boil in salted water.
Mix the potatoes and roasted pumpkin with 2 litres of warmed water (use some vegetable stock for added flavour)
Once the mixture has cooled slightly, blend together.
Finish by drizzling the cream on top, sprinkle the chives and a splash of truffle oil.
