A Winter Classic: Pumpkin Soup
What’s not to love about Pumpkin Soup? Smooth, hearty and classic, it’s everyone’s favourite winter warmer. The Chef’s in the kitchen at EAT LOVE PIZZA in Darling Harbour are a generous bunch. They’ve handed over another of their best recipes for you to indulge in this winter! This is the perfect dish to serve as a winter entree at your next dinner party or with crusty buttered sourdough for a hearty warming snack.Ingredients (Serves four people)
500g pumkin
100ml EVOO (extra virgin olive oil)
150g potatoes
50ml cream
½ bunch rosemary
Salt & pepper to taste
Garnish- chopped chives & truffle oil
Method
Roast Pumpkin with rosemary, salt and pepper in a preheated oven at 180 degrees for about 12 minutes.
Peel potatoes and boil in salted water.
Mix the potatoes and roasted pumpkin with 2 litres of warmed water (use some vegetable stock for added flavour)
Once the mixture has cooled slightly, blend together.
Finish by drizzling the cream on top, sprinkle the chives and a splash of truffle oil.
